    The buckets are ' fermentation vessels ' needed to keep the honey liquor from contamination while the honey/sugar is converted to alcohol by yeast . When yeast has done its job ( about a week @20 degrees ) syphon off the mead into very clean bottles cap/cork and store for 3 months. Sounds simple...
