I can cook well, used to be a part time chef. Favourite food to make is Fillet steak with a diane sauce. Not my favourite to eat though, dont enjoy stuff i make myself.

You have to have quite intense heat to crisp the outside and keep the inside rare, its not so tricky when you are pan frying or cooking on a griddle but when it comes to grilling its a little harder (I used prop it up closer to the flame (gas grill) to crisp the outside, was very easy to burn though, especially if it was a fatty steak like sirloin).

I do taht, just put it close to the grill, on full heat. Burnt on the outside is fine as long as its bleeding on the inside (preferably not too much, but when you squeseit, it should bleed)
