Anyone able to point me in the direction of what stats each horse gives?

Example, Brown Horse )Cheap one), does it give stats or do you neeed to buy Armour for it?

I think if you go in Bichon there is on the left of bichon up a npc who sells the horses,and if you check at the npc it will tell you price of each horse and what they give

Brown horse give no stats at all, just 50 bag weight ( might be wrong not 100% sure ) If you go to the npc that sells them in Bichon you can see price for each horse and what stats they give. It's Top left from bichon ( there's a house there on the map easy to notice )

nice, so the gamegold/huntgold mounts dont give any weight then?

They are not mounts, they are just armours that you equip to the horses and give aditional stats, no weight as far as i know just stats
