Dual channel never HAS to be used, but it improves performance a lot (A64 s939 and Pentium 4 especially). The general rule is get a matched pair (or really two of the same modules). If you run 2 different modules, you could have problems/ it could lower your performance. If you use two different ones, you would have to set the latency to the slowest module. As for voltage, almost all ram operates in that 2.6-2.75 range, and even if you set both to 2.85 it wouldn't matter.
What motherboard? A dual channel kit isn't anymore expensive than a single module 512 vs 2x256 etc.
